Dorado is a surface dwelling ray-finned fish native to offshore temperate, tropical and subtropical waters throughout the world. They are known by many other names such as ‘Mahi-Mahi’ (in Hawaiian), dolphin-fish, calitos, maverikos or lampuki (Maltese). Despite dolphin-fish being a common name, dorado is a fish and not mammal like dolphin. Dorado is one of the fastest-growing and fast-swimming fish, with a top speed of about 50 knots or 93 kmph.

Dorados generally live under a depth of over 1000 feet. Their average size is 7-13 kg and rarely exceed 15 kg in weight. Average lifepsan of dorados is 4-5 years. Dorados have a compressed body with long dorsal fins extending almost all over the length of their body. They come in some of the most dazzling colors such as golden on the sides and bright blue and green on the sides and back. Dorado often changes its color when removed from water and finally fading to a muted yellow-grey upon its death. They feed on flying fish, crabs, squids, mackerels, crustaceans and other small fish. They are highly sought-after fish as game fish and for other commercial purposes.
